The Holiday Cocktail – How to Make It

WThis is an easy interpretation of a drink from the seasonal cocktail list. It's a batch prepared mix that's loaded with flavours associated with holiday season, which makes it excellent for a holiday party. Reserve the remaining citrus syrup you can use for breakfast cocktails, desserts, or for more rounds of bikinis.

The Bikini Cocktail

Serves 10 people

To make the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (yields 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

For the Citrus Syrup: Combine every components into a pan, bring to a simmer, mixing to dissolve. Then, remove from the stove allowing it to reach room temperature entirely. Decant into a sterilised bottle, seal and refrigerate it in the refrigerator, it will last for around a month.

Preparing the Premix: Pour all the liquid ingredients into one big jug, leave to sit for an hour, then strain best through muslin, to ensure it's perfectly clear.

When ready to serve: Pour 85ml of the batch mix to a cocktail shaker packed with ice, and agitate lightly for a minute to chill. Pour into a frosted cocktail glass or a similar vessel, top with the cranberries adding the final touch by giving it a quick spritz of mandarin oil over the drink.
